Born and raised in the heart of the Deep South. Long before I remember I remember summer afternoons spent drinking iced tea and shelling peas and butterbeans on the porch of my grandmother. They have gone from my roots and went in other regions. One thing, however, has remained constant in my life is my deep and abiding love for southern cooking and cuisine.
I probably was in my teens before I realized that tea can be served any other way to load with sugar and ice. It was then that I have made some people to eat vegetables that had not been in wet dough, dredged in cornmeal, fried and fatty. Southern cuisine is not for the faint of heart, though it may cause many hearts to grow faint. One thing I can say is that you will not find anything like it in the world.
People in the South learned to be content with little, in many cases. Some of the poorest in the United States live in the south. Of course, you will find that many of these people, despite their poverty are among the most generous. The same is true of food. The only thing that seems to be in ample supply in many homes in the south and few will leave with an empty stomach.
Maybe it's the seasoning that is often used when cooking food in the south.
